Flapjacks with Cream and Berries
Give comforting flapjacks some grown-up glamour by topping a pile with vanilla-infused whipped cream and a generous handful of fresh cherries and berries.
For a sweeter option, substitute the berries with a chocolate sauce.
5 tbsp sugar
1½ tbsp butter, melted
500ml cake flour
4 tsp baking powder
½ tsp salt
1 tsp vanilla extract
Fresh berries and cherries
Beat the eggs, gradually adding the sugar.
Add half of the milk and the melted butter to the egg mixture. Mix well.
Sift together the flour, baking powder and salt, and add to the egg mixture.
Gradually mix in the remaining milk to form a smooth batter.
Drop spoonfuls of batter onto a heated greased nonstick pan.
Turn once the top is full of breaking air bubbles; cook on the other side until golden brown.
Whip the cream and vanilla extract until soft peaks form.
Serve the flapjacks with a dollop of cream and a generous handful of fresh berries.
